AVOCADO, MANGO AND BROCCOLI SALAD

  • 2 ripe avocado’s
  • 2 ripe mango’s
  • 2 cups of broccoli florets, chopped and lightly steamed
  • half a cup of red onion, very finely sliced
  • a quarter cup of raisins
  • a quarter cup of chopped walnuts
  • a sprinkling of Himalayan salt and fresh ground pepper

This is a gorgeous party salad, offering vitamin A, vitamin C, folic acid, calcium, magnesium, iron and beta-carotene.    Serve chilled, with a honey, mustard and olive oil blended dressing.
