One of my favourites, and now soooo healthy…  With a lovely crisp nut base, instead of the old soggy pastry…

CRUST
2 cups of madadamia nuts
half a cup of shredded coconut
3 tablespoons of stevia
1 teaspoon vanilla extract
Half a teaspoon of salt

FILLING

2 cups of Irish Moss paste

1 cup of fresh lemon juice

1 cup Stevia natural sweetener

Half a cup of soaked cashews

1 teaspoon of vanilla extract

1 pinch of turmeric

Half a cup of melted coconut oil

METHOD

Crust

Pulse the macadamia nuts to flour.   Add the rest of the ingredients and pulse.   Press into a 9 inch tart pan with a removable bottom, and refrigerate.

Filling

Blend the Irish Moss paste, lemon juice and Stevia in a Vitamix or other strong blender until smooth.   Add the cashews, vanilla and turmeric and continue to blend until smooth.  Drizzle the coconut oil in last, creaming until smooth.

Assembly

Pour the filling into the prepared crust.   Chill for an hour before serving.
